Anna-Christina Cabrales

Beverage Director and General Manager

Morrell Wine Bar beverage director and assistant general manager, Anna-Christina Cabrales brings a wealth of wine and culinary experience to her position. Growing up in a large family of chefs, Anna’s love of food and wine led her to the International Culinary Center which she received a grand diploma in Culinary Arts for French Cuisine and graduated from the first Intensive Sommelier program. Outside of pursuing her Advanced Certification under the Court of Master Sommeliers, she enjoys her time dining and enjoying wines from the regions of Champagne, Northern Rhone, Bandol and Burgundy. Since joining Morrell in 2012, Anna-Christina has expanded the by-the-glass selection to at one point more than 150 wines. Her efforts were rewarded since 2014 when the prestigious quarterly, The World of Fine Wine voted Morrell Wine Bar’s glass list “Best by-the-glass Wine List” and since 2015 has attained the Best of Award of Excellence award from Wine Spectator by growing the bottle list well over 1,200 selections.

Juan Carlos Mendoza

Executive Chef

Juan Carlos Mendoza grew up in Mexico and moved to New York City in 1992. He trained at a series of Manhattan restaurants including Bryant Park Restaurant and America before joining the team at Morrell Wine Bar & Cafe in 2001. Mendoza quickly became a staff staple, ascending the ranks to become sous chef in 2006. In March of 2013, Mendoza was named executive chef and immersed himself in the challenge of creating a menu that both balances Morrell’s vast wine offerings and provides diners with interesting yet approachable food options.

Mendoza’s culinary perspective reflects a deep respect for French and American traditions and flavors. He is dedicated to continue innovating in the kitchen without losing the dishes and attitude that has garnered Morrell such a loyal and large following.

Christian Fentress

Sommelier

A New Jersey native, Christian graduated from Johnson & Wales University with a Bachelor of Science in Culinary Arts and Foodservice Management. Upon graduation, he moved to Florida to begin work at The Walt Disney World Resort, most notably as part of the management team for Citricos at Disney’s Grand Floridian Resort & Spa, where he helped to oversee the beverage program.

Christian is a Certified Sommelier, with The Court of Master Sommeliers, a certified Specialist of Spirits from the Society of Wine Educators, and a Certified Beer Server through the Cicerone Program.
