Stephen Brumble Jr.
Stephen Brumble Jr. joined the Morrell Wine Bar and Café team as General Manager in July of 2015. Stephen grew up in Seattle and after a short stint in the United States Navy, graduated from the Boston Conservatory of Music. Since moving to New York City in 1996 Stephen has been firmly entrenched in the hospitality industry. Stephen has worked for celebrity chefs Terrance Brennan and David Burke, with whom he had the opportunity to hone his skills as a member of the service and bar staff. Mr. Burke took a chance and offered Stephen an opportunity to join his management team. After further experience in event management and planning Stephen knew his true love would be elevating the new generation of food and beverage professionals in the art of hospitality and service. The rest, as they say is history. Bringing his passion for great food, wine and exceptional service, Stephen looks forward to growing the tradition of excellence at Morrell Wine Bar and Café as an integral fixture in the New York restaurant community.
Juan Carlos Mendoza
Executive Chef, Morrell Wine Bar & Cafe
Juan Carlos Mendoza grew up in Mexico and moved to New York City in 1992. He trained at a series of Manhattan restaurants including Bryant Park Restaurant and America before joining the team at Morrell Wine Bar & Cafe in 2001. Mendoza quickly became a staff staple, ascending the ranks to become sous chef in 2006. In March of 2013, Mendoza was named executive chef and immersed himself in the challenge of creating a menu that both balances Morrell’s vast wine offerings and provides diners with interesting yet approachable food options.
Mendoza’s culinary perspective reflects a deep respect for French and American traditions and flavors. He is dedicated to continue innovating in the kitchen without losing the dishes and attitude that has garnered Morrell such a loyal and large following.
